Blueberry Crisp Recipe
Preheat the oven to 375° F
6 cups of blueberries
Juice and grated peel of one lemon
1 teaspoon cinnamon
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon mace
1/2 cup brown sugar
1 cup whole wheat flour
2-3 pinches of salt
1/2 cup butter substitute
Whipped cream or ice cream for a topping (optional)
Toss with the lemon juice and peel, the cinnamon, mace, and nutmeg. Arrange in baking pan.
Combine the sugar with the flour and salt. Cut in the butter (Earth Balance butter substitute) with a pastry cutter or two knives. Distribute the topping over the fruit.
Bake for 35-40 minutes at 375° or until crisp begins to brown. Serve warm with a dollop of whipped cream or a small scoop of ice cream, if desired.
