Lemon Lentil Soup
3 tablespoons olive oil
2 teaspoons minced garlic
1 large onion, chopped
6 cups vegetable stock
1 cup red lentils
Grated peel of 1 small lemon
1/4 cup lemon juice
1 teaspoon salt
White pepper to taste
Instructions
Sauté onion and garlic in olive oil for a few minutes. Add remaining ingredients except lemon juice and bring to a boil. Reduce heat and simmer for 45 minutes to one hour. Lentils should be mostly dissolved. Add lemon juice. Adjust seasoning by taste. Serve garnished with paper-thin lemon slices and chopped chives.
